Indian Masala Noodles
What you need:
- Noodles broken into small bits (ideally thin wheat semolina pasta such as "Rivocca" usually available in international groceries; if all else fails then Mueller's Angel hair pasta may be an acceptable alternative) - 1 cup
- Crushed tomatoes - 3/4 cup
- Frozen veggies (like carrots, peas, cauliflower) - 3/4 cup
- Cumin seeds - 1/2 teaspoon
- Turmeric - 1/4 teaspoon
- Chopped onion - 1/2 cup
- Chopped garlic - 1 or 2 cloves
- Sliced jalapeno pepper - 3
- Garam masala - 1/2 teaspoon
- Cooking oil - 2 tablespoons
- Red Chilli powder (add to taste) - 1/2 teaspoon
- Salt (add to taste) - 1 teaspoon
Now get to work:
Cook 1 cup noodle (broken into small bits) in 2 cups water and drain;
rinse in cold water and keep aside.
Cook veggies in microwave, drain, and keep aside.
Heat oil in saucepan, add cumin seeds, onion, garlic, red chilli powder,
and turmeric and
saute for 1-2
minutes (don't burn it!). Add jalapeno pepper, and crushed tomatoes and
stir for 2-3 minutes. Add cooked veggies, cooked noodles, and salt and stir
the mix for 1-2 minutes. Add garam masala to the mix and stir for another
1-2 minutes.
Ready to serve!
